Strawberry Poppyseed Salad

Ingredients

For the salad

8 ounces spinach

10 ounces strawberries

1/2 cup candied pecans, chopped (Trader Joes)

1/2 small onion, sliced (50g)

3 ounces fat free feta cheese (Trader Joe’s)

For the dressing

1/4 balsamic vinegar

3 tablespoons olive oil

1 &1/2 tablespoons poppyseeds

1 & 1/2 tablespoons honey

1/2 teaspoon Dijon mustard

1/2 teaspoon salt

1/8 teaspoon pepper

Instructions

Toss your salad ingredients in a medium size bowl.

Mix all your dressing ingredients well and drizzle over the salad when ready to eat.

Enjoy! Serves 5
